Bananas Foster French Toast

The perfect sweet treat to make for a special mom on Mother's Day!

Ingredients:
4 eggs
1/4 cup milk
2 teaspoon vanilla extract - divided
8 slices whole grain bread bread
2 bananas, sliced
1/2 cup brown sugar
1/4 cup butter
1 tablespoon dark rum or rum extract - optional
powdered sugar
Oil

Directions:
Crack eggs into medium size shallow bowl, beat lightly with a fork. Add milk and 1 tsp vanilla, stir well.

Heat griddle or frying pan over medium heat.  Coat with a thin layer of oil.

My Medifast Weight Loss Journey

On a break while traveling for work

Woohoo!!!!  I lam getting so close to reaching my goal weight!  My total weight loss is over 60 lbs since August!  The next few weeks may prove a little more difficult since with the new job I will be travelling for the next three weeks and will be eating whatever is served...but I have faith that by using the skills I have learned at Medifast, I will make smart decisions about my food choices and at least minimize any weight gain.
