Chili Macaroni

Super Easy, and ALWAYS a hit with the kids!

One of the staple dishes in our house is Chili-Mac.  And since this is Macaroni Kid, I decided it would be appropriate to share my super-secret, super-simple recipe with all of you.

Here's what you need:

  • 2 cups dry macaroni noodles
  • 2 cans cream corn
  • 1 can whole kernel corn
  • 4 oz Velveeta cheese
  • 2 cups shredded cheese (whatever kind you like)
  • 1/4 cup butter
  • 2 pounds ground beef
  • 1 package chili seasoning
  • 1 can chili beans, undrained

Here's what you do:
  1. Put the noodles, corn, cheeses, and butter in a Crockpot on high, stir them all around a couple times, then leave it for 3-4 hours.  It depends on how hot your Crockpot runs.  Mine runs REALLY hot, so its sometimes done at 2 1/2 hours.
  2. When the macaroni is done and you're almost ready for supper, turn the temp on the slow cooker down to low or keep warm, brown the ground beef in a pan, pour on the chili seasoning and the beans, let simmer for 10-15 minutes. 
  3. When the meat is done, I like to pour off some of the grease, then layer it on a plate with the macaroni.  You can just mix it all together, but I just like the way that it looks when it's layered.

Oh, and the macaroni by itself as a side dish is also a big hit!
